People in Florida are rediscovering what good ol’ pizza is all about.
| Gourmet pizza places such as Pizzaiolo Bavaro, Anthony’s Coal Fired Pizza, Pizza Fusion, YourPie, Mellow Mushroom and Wood Fired Pizza are creating pizzas the way the Italians do it.
Within a $20 budget, pizza at its tastiest high end flavor is beyond reach and people are increasingly patronizing these restaurants since they already know the premium food quality and superb customer-service they will be getting. |
Yolanda DeVesta describes her experience eating at Pizzaiolo Bavaro, ‘My husband is authentic Italian, and this – this is the kind of pizza he would make… They use fresh basil, fresh sauce, sauce from scratch. It melts in your mouth…”
These gourmet pizza restaurants are careful about expansion. They say mastering the technique in making the right pizza takes time and effort.
Artisan pizza is, well, a work of art. There are so many variables one must consider. The ingredients must be fresh and the heat of the wood must just be right. The strain of the yeast should be correct and even the mineral composition of the water should be taken into consideration.
The market for pizza is big with more than $30 billion annual revenue, yet, pizza stores are thinking of ways to increase sales – with major chains adding more in their menu.
But there will be people who will be looking for artisanal and gourmet pizzas.
| Even restaurant expert Darren Tristano of Technomic agrees, ‘On one hand, you have people who say they can just sit in front of their monster plasma screen and order pizza for delivery; but for the growing part of the market, that’s not just going to be the same as getting the really good pizza.’ | |
