A Cheesy Pizza Alternative

Too much of something is always bad enough, even if its as delicious as a pizza. Quinoa Polenta Pizza

Ingredients:
1 tablespoon olive oil?
1 tube quinoa polenta, sliced into 15 1/4-inch slices
3 Roma tomatoes, sliced?
1/2 cup shredded mozzarella
3 tablespoons chopped fresh basil

Directions:
  1. Preheat oven to 350 degrees. Pour oil into a medium-sized saucepan and heat over low heat. Place polenta in the pan and cook on each side for about 10 minutes until golden brown. Remove from heat and place on a foil-lined cookie sheet. 
  2. Top each piece with 1 slice of tomato, and sprinkle with cheese and fresh basil. Bake for 10 to 15 minutes or until cheese is melted.
