Baked Potato Pizza Recipe

One of the most popular side items at both restaurants and at home is the trusty baked potato. While many prefer to eat it plain or with a dollop of sour cream, nothing beats a loaded baked potato, covered with cheese, bacon, and chives. But have you ever decided to try one...on a pizza? Yes, it is possible to get the loaded baked potato taste on a pizza, and best of all, it's quite simple.

To make a loaded baked potato pizza, you will need the following ingredients: 

-1 large pizza crust
-2 medium-sized potatoes
-3 strips of bacon, fully cooked
-1/2 cup of chopped chives
-1/2 cup of sour cream
-Salt and pepper
-1 tbsp. of olive oil
-3/4 cup of shredded cheddar cheese

To start, you need to bake the potatoes. While actually baking them in the oven is a great way for some crispy potatoes, the quick and easy way is to wash them, pierce them all over with a fork, and cook on a paper towel for about five minutes or until tender. You may need to cook it a little while longer if it's a larger potato. 

Once the potato is cooked all the way through, let it cool, then cut into small cubes. Combine salt, pepper, olive oil, and potatoes into a small bowl and mix together until the potatoes are thoroughly coated. 

Next, take the pizza crust and coat the bottom with a thin layer of layer of olive oil. Add the cheddar cheese, followed by the remaining toppings, sans the sour cream. Bake in a pre-heated oven for 10-12 minutes or until the cheese has melted. 

Remove from the oven and, after letting it cool for five or so minutes, spread the sour cream over the top of it. To apply it evenly, put the sour cream in a plastic baggie, twist until it forms a tube, then cut a very small hole in the end. This will allow you to distribute the sour cream much like you would frosting on a cupcake. 

Conversely, you can use the sour cream and mix it with mayo to make a base used in place of marinara sauce.
