Bean Cake Pizzas Recipe

Created by Brenda Hulin for About.com, this tasty recipe is unusual because the bean cakes serve as the pizza crust.

This flavorful snack works as hors d'oeuvres, and you can make about six of them with this recipe.

While you can certainly buy black bean cakes in your local supermarket or gourmet grocery in the freezer section, you can also make your own quite easily. Simply drain your canned beans and mash with a fork. Stir in chopped peppers, green onion, garlic, salt, pepper, and cumin, plus an egg and enough bread-crumbs to make a stiff mixture. Roll the mixture into balls, then flatten the bean balls, coat with cornmeal or breadcrumbs, and pan-fry until browned.

Ingredients

6 large black bean cakes, fully cooked

1-1/2 cups fresh tomato salsa

1/2 cup sliced black olives

3 cups shredded Mexican blend cheese

Sour cream

Avocado slices

Directions

1. Place bean cakes on a baking sheet lined with nonstick foil.

2. Top each with 1/4 cup well-drained salsa, a few black olive slices, and ½ cup shredded cheese.

3. Bake bean cake pizzas at 350° or until cheese is melted. Serve with sour cream and avocado slices.
