Caprese Pizza Rolls

Rolls are the easiest to eat when your trying to multi-task. The average on the go person will be having a hard time eating the usual triangular pizza slice when on the move that is why Diethood's pizza recipe is the perfect solution!


1 tube (10-count) Ready-To-Bake Buttermilk Biscuits
1/2 cup shredded mozzarella cheese
1 to 2 small roma tomatoes, sliced into thin rounds (you might not use all slices)
1/4 cup sliced fresh basil
salt and fresh ground pepper, to taste
1 egg yolk
1 tablespoon water
sprinkle of kosher salt and fresh ground pepper

  1. Preheat oven to 400.
  2. Line baking sheet with foil and lightly grease with cooking spray; set aside.
  3. Flatten each biscuit-dough with the palm of your hand to about a 4-inch diameter.
  4. Evenly divide shredded mozzarella and add in the center of each dough-disc.
  5. Top with tomato slice (only 1 to 2 slices will fit), and sliced basil.
  6. Season with salt and pepper.
  7. Wrap each dough-disc closed, shaping it into a ball.
  8. Transfer to prepared baking sheet, seam side down, and arrange the rolls so that they are touching each other.
  9. In a small bowl whisk together egg yolk and water.
  10. Brush each roll with egg wash.
  11. Sprinkle a bit of kosher salt and pepper on top of each roll.
  12. Bake for 12 to 14 minutes, or until tops are golden brown.
  13. Remove from oven.
  14. Serve immediately.
