Earth day Pizza Recipe from Otto Enoteca and Pizzeria

Since everyone is celebrating earth day, Otto Enoteca and Pizzeria has also joined the club and featured their very own basil inspired pizza recipe for this special day. The dish is called Earth day Sformato Genovese.



Earth Day Sformato Genovese 
Yields 6, 8 oz sformato

6 whole eggs 
3 cups heavy cream
1 quart finely grated Parmigiano Reggiano
2 tablespoons fresh ricotta
2 tablespoons Genovese pesto
1 ½ teaspoons corn starch
1 teaspoons unsalted butter
freshly ground black pepper to taste

In a large mixing bowl whisk the 6 eggs and add the Parmigiano, ricotta, corn starch and pesto and whisk together and set aside. In small sauce pot bring the heavy cream to a low boil and season with black pepper. Add the cream to the egg and cheese mixture ad whisk together until incorporated. Pour the mixture in to buttered ramekins and bake at 300 in water bath for 40 min, turning halfway through. Check the doneness by placing a toothpick in the center and seeing if it comes out clean. Let cool to room temperature so they set well. Serve at room temp or warm

Basic Genovese Pesto 
3 tablespoons pine nuts 
2 cups fresh basil leaves 
1 clove garlic
½ cup extra virgin olive oil
¼ cup Parmigiano Reggiano

Combine nuts, Basil, Garlic in a mortar and grind with pestle. Drizzle oil while mixing with a wooden spoon add the cheese 1 tablespoon at a time until it forms thick paste. Can also make in food processer.
