Eggplant Pizza Recipe

It can be smothered in marinara sauce and cheese can called parmesan or it can be cut into strips and bakes like fries, but eggplant, that large and enigmatic purple vegetable is a delight when placed atop a pizza. Best of all, it’s incredibly simple to make.

To make an eggplant pizza, you will need the following ingredients:

-1 large pizza crust
-1 large eggplant
-3 tbsp. of olive oil
-3/4 cup of shredded mozzarella cheese
-1/2 cup of marinara sauce
-2 tbsp minced garlic
-Salt and pepper to taste

To start, you need to cook the eggplant. You can go with a lower fat option and bake it, but for a richer flavor, I would recommend cooking it on the stove top. Fill a large pan with the olive oil and garlic and place it over medium heat. Cut the eggplant into slices, about 2-3 inches in diameter and ? inch thick. Arrange in the pan and sautee on each side until thoroughly cooked through. Remove and set on a paper towel to soak up the excess oil. Spring a little salt and pepper on top to taste.

Next, take the pizza crust and add the marinara sauce and ? of the cheese. Finally, arrange the eggplants over the cheese until it completely covers the crust. Once this is done, add the rest of the cheese and place in an oven pre-heated to 400 degrees for 10 minutes or until the cheese is bubbly and the crust is cripsy.

Remove, let cool, then enjoy!
