Farrarzano's Pizza Dough

Ferrarzano has his own pizza dough recipe and it makes good dough just like in the picture. If you want to create something similar, this is the recipe you must be looking for! Although, it is not really a quick and easy procedure and there are more ingredients involved, but this ensures you of a tasty dough – something less topping required.


10 ounces King Arthur Bread Flour

3.7 ounces semolina

6 teaspoons sugar

1 teaspoon salt

1 teaspoon garlic powder

1 packet Red Star instant yeast

8 ounces water


1. This is mixed and kneaded in a Bread Machine for 20 minutes, then allowed to rise for 2 hours. Following the initial rise, it is placed in the refrigerator for 24 hours. The sauce is a fairly simple tomato sauce made from tomato puree and water with salt, pepper, Emeril's Italian Seasoning to taste. I have been using Costco's shredded Mozzarella cheese and Sweet Italian Sausage from the grocery store.

2. The pizza is baked at 475 in the oven on a pizza screen placed on a pizza stone on the lowest rack of the oven for approximately 12 minutes.
