2 English Muffins
¼ cup tomato paste
1/3 cup coarsely grated cheddar cheese
2 large pimento-stuffed green olives, cut into 8 slices
½ small red capsicum, deseeded and cut into thin strips (hot!)
½ small carrot, peeled and coarsely grated
Heat grill on medium high and split the muffins.
Spread the open side with tomato paste and place with that side up on a baking tray.
Sprinkle with some cheddar cheese.
Make the eyes by placing 2 slices of olives on each muffin.
Create the mouth with the capsicum strips.
Place under grill for 3-5 minutes or until the cheddar melts.
Transfer muffins to serving plates and make hair by placing carrot gratings on top of the muffins.
Serve immediately and enjoy.
