Guiltless Pizza Soup

Probably, the fastest way to lose weight it to lessen food intake and getting good exerise but who has time to count the calories? Some unhealthy dieters achieve their goals through a soup diet - not really recommended since it lacks nutrition, thus brings back weight once you get back to your old food routine. Ingredients: 
1 1/2 cups of your favorite veggie pizza toppings
1/2 cup of favorite protein pizza toppings
1 tablespoon light buttery spread
2 cups low sodium vegetable broth
1 cup pizza sauce
1 slice of whole wheat bread
1 cup low fat mozzarella cheese
salt and pepper to taste


Directions: 
1. In a medium saucepan melt buttery spread on medium heat, reduce heat to lowmedium and add veggies and uncooked protein toppings. cook until veggies are tender and proteins are cooked through. 
2. add broth and pizza sauce; mix well and bring soup to boil; reduce heat and simmer on low heat for at least 10 minutes. 
3. while soup is cooking cut the slice of bread into about 16-20 squares for croutons; place in toaster oven or boiler and toast both sides of bread
4. once soup is ready scoop serving into bowl and top with half of cheese and croutons.
