Mini Brown Bread Pan Pizzas

Cubes n' juliennes blog turned a mini brown bread into a mini brown bread pan pizza. How about trying it for some quick lunch? Here's a great treat that will probably fill you til' another afternoon snack.

Ingredients:
Brown Bread slices
Mixed vegetables
Cream cheese
Semolina
Dried Oregano
White pepper powder
Tomato ketchup
Chili flakes
Pizza seasoning
Salt
Mozzarella cheese
Oil

Directions:
  1. With the help of a cookie cutter/small steel bowl with sharp edge, cut the bread slices into small  bread circles of around 5 to 6cms. (The leftover portion of the bread slice after cutting the circle can be used to make bread crumbs so do not discard them)
  2. In a bowl, mix together, cream cheese, semolina, oregano, white pepper powder and little salt. This is a cream cheese mixture.
  3. Take a bread circle, spread a layer of cream cheese mixture. Spread little tomato ketchup over the cream layer. Sprinkle little pizza seasoning, little chili flakes, little salt(if required).
  4. Place a spoonful of mixed veggies over the ketchup layer, top them with grated mozzarella generously. Sprinkle some more pizza seasoning over it.
  5. Repeat the same procedure for all the bread circles to make mini bread pizzas.
  6. Heat oil in a flat heavy bottom non-stick pan. Place the prepared mini bread pizzas on the pan.
  7. Let it cook for 15 seconds. Reduce the heat and cover the pan, allow it to cook for 1 to 2 mins till the mozzarella cheese melts.
  8. Uncover the pan, increase the heat to medium-high, and cook for a minute or until the bottom of the mini pizzas turn brown and crisp.
  9. Take them out and serve them hot and crisp with tomato ketchup or any other sauce of choice.
