Pizza Casserole Recipe

Created by Brenda Hulin, this dish presents two distinct possibilities: pizza without the crust or lasagna without the meat.

You can get really creative with this recipe and layer in any other ingredients or leftovers that strike your fancy.

This pizza is family-friendly fun and makes a great supper in the form of one 9 X 13-inch casserole.

1 (1-pound) bag wide noodles

1 tablespoon olive oil

Salt and pepper to taste

4 cups thick pasta sauce

1 cup green bell pepper, diced

1 pound sliced mushrooms

1 medium onion, diced

1/2 pound Italian sausage, cooked and sliced

6 cups shredded Italian-blend cheese

1/2 pound sliced pepperoni

1 cup ricotta cheese

1. Cook noodles according to package directions, making sure not to overcook. Drain well and toss with olive oil, salt, and pepper.

2. Arrange a layer of noodles in a buttered baking dish. Top with a cup of sauce, followed by the bell pepper, mushrooms, onion, and sausage. Sprinkle 1 cup of shredded cheese over the sausage layer.

3. Spread another layer of noodles over the casserole, followed by 1 cup of sauce, sliced pepperoni, and another cup of cheese. Add the remaining noodles in an even layer and cover generously with sauce. Distribute dollops of ricotta over the noodles, then spread the remaining cheese over the top of the casserole.

4. Place the dish on a baking sheet to catch drips and bake at 350° for 30 to 35 minutes. Cheese should be nicely browned. Let stand 10 minutes before serving.
