Pizza Night Lunch

Peachy Palate has all the right to feature this pizza night lunch recipe that covers basically everything you need for a midnight craving - healthy ingredients!  Say goodbye to added calories and fats with this Pizza night lunch recipe.

Ingredients:
Pizza Base
1/2 cup (60g) buckwheat flour
3/4 cup (90g) millet flour
2 tsp dried herbs of choice
1/4 tsp sea salt
1/4 tsp black pepper
2 tbsp applesauce/puree
1 cup (250ml) water
Hemp Pesto

Adapted from oh she glows
1/4 cup (40g) hulled hemp seeds
1 cup (20g) fresh basil
4 tbsp water
2 tbsp lemon juice
1 clove roasted garlic
4 sundried tomatoes (rehydrated in water, not packed in oil)
1/4 sea salt and black pepper to taste

Toppings
Hulled Hemp Seeds
Slow Roasted Tomatoes

Directions:
  1. Preheat oven to 180C (350F).
  2. Blend together all base ingredients. Place in a deep non stick 8 inch skillet or round cake tin! Bake for 35 – 40 minutes.
  3. Meanwhile blend together all pesto ingredients (I used about 2/3 of it for the topping – store leftovers in the fridge).
  4. Spread pizza base with pesto, top with slow roasted tomatoes and return to the oven for 5- 8 minutes to heat through. Serve sprinkled with hemp seeds.
  5. Makes 6 nice size slices and serves 2. The base is quite filling!
