Roasted Tomato Pizza Recipe

Pizza is incredibly versatile, and while a lot of people enjoy using esoteric ingredients to create a one-of-a-kind creation, nothing beats the tried and true toppings we have all grown up with. One of the fun things to do with these toppings is find new ways to prepare and display them on the pizza. One such example is the trusty tomato. Not only will it eliminate the need for marinara sauce (if you want, of course), but by roasting them you add a level of sweetness to the pizza that is absolutely delicious.

To make a roasted tomato pizza, you will need the following ingredients: 

-1 large pizza crust
-3 tbsp. of olive oil
-1 large red tomato
-1 large green pepper
-1 large red onion
-3/4 cup of shredded mozzarella cheese
-Salt and pepper

Take the tomatoes and cut into small wedges. Place on a cookie sheet and coat with olive oil and sprinkle with salt and pepper. Put the cookie sheet in an oven pre-heated to 350 degrees and roast the tomatoes until soft.

Next, cut the onion and pepper into slice and place in a non-stick pan coated with the remaining olive oil. Sautee until nice and crispy. Remove from the oil and set aside. 

Once the tomatoes are done, coat the pizza crust with a thin layer of olive oil. Sprinkle the top of the crust with the mozzarella cheese, then evenly distribute the tomatoes, onions, and green peppers. 

Pace in the oven for approximately 12 minutes, or until the cheese is melted and bubbly. Remove, let cool, then enjoy!
