Rustic Sweet Pizza with Figs and Mascarpone

The Untamed Cook suggests that this pie be used for casual dinners and those events needing of sudden dishes. Its easy, quick and delicious - a rustic sweet pizza filled with figs and mascarpone. 

Quick Pizza Dough
3 cups 000 flour (plain flour can be used) 
1 teaspoon salt 
1 sachet dried yeast (approx 7g or 2 teaspoons) 
 1 cup warm water 
3 tablespoons olive oil

  1. Place the flour, yeast and salt into a large bowl; make a well in the centre.
  2. Add the combined water and oil and mix to a thick paste. (You may need some additional water)
  3. Transfer to a work bench dusted with some additional flour and knead with the ball of your hands.
  4. Roll out dough and top with your favourite toppings.
  5. Bake on a preheated pizza stone at 250°C for 6-8 minutes, until base is crisp and cheese is bubbling and melted. Remove from oven and rest for 5 minutes.
  6. Top it with whatever your imagination conjures up and Mangia que te fa bene!
