Small Pizza Recipe

May it be for buffets, lunches, children's parties or picnics, Italianchips' pizza recipe is claimed to be perfect for these occasions since it is small enough to carry and filling inside! 

125 gr of all purpose flour
125 of Manitoba flour (strong flour for bread)
50 gr of butter
120 ml of milk
1 tsp of sugar
2 tsp of salt
1 tsp of baker’s yeast
1 small can of peeled tomatoes
180 gr of mozzarella

  1. In a small bowl put the baker’s yeast together with 50 gr of the all purpose flour and 70 ml of the milk and make a batter helping yourself with a fork. Cover it with plastic wrapand let it rest for 1 hour.
  2. After this time transfer it to a bigger bowl (I used my kitchen robot) and add the remaining flours, milk, salt, sugar and butter at room temperature.
  3. Work the dough energetically for 10 minutes on a floured surface or knead it with your kitchen robot.
  4. Cover it with a kitchen towel and let it rest for 2 hours.
  5. Take the dough and roll it out forming a couple of millimeters thick sheet.
  6. Using a pastry cutter, cut circles and place them on a baking tray (not too close one to another) covered with parchment paper.
  7. Let them rest for 45 minutes.
  8. Preheat the oven to 180°C/356°F.
  9. Take the can of peeled tomatoes and reduce it to a puree using an immersion blender.
  10. Cut the mozzarella in small cubes.
  11. Dress each slice with the tomato sauce, mozzarella and dried oregano.
  12. Bake them for about 20 minutes.
