Vegetarian Pizza Recipe

Its not so fatso but it came from Fatso in the Kitchen's recipe! It's a delicious meal filled with healthy ingredients in just one pie! 

1 unbaked pizza crust
½ cup tomato purée sauce
2 cups shredded Cheddar cheese
½ cup chopped onion
½ cup chopped red bell pepper
½ cup sliced fresh mushrooms
1 lb mozzarella cheese, shredded
4 small tomatoes cut into quarters
Olive oil

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place pizza crust on a pizza pan or baking sheet and brush with olive oil.
  3. Spoon the tomato purée onto the surface in an even fashion.
  4. Sprinkle with Cheddar cheese, followed by onion, red pepper, and mushrooms (or topping of your own choice). Top with mozzarella cheese.
  5. Bake in preheated oven for 15 to 20 minutes, until vegetables are tender, and cheese is melted and nicely browned.
  6. Add the quartered tomatoes and serve hot. (I also find that cold pizza is rather delightful because the flavors marinade to the better).
