Zucchini Pizza Bites (Source)
4 slices large zucchini cut to ¼ inch thickness
Olive oil spray
Salt and pepper
2 tablespoons marinara sauce
¼ cup shredded part skim mozzarella
Cut zucchini to ¼ inch thickness. Spray both sides lightly with olive oil. Season with salt and pepper. Broil or grill zucchini for 2 minutes each side. Top with sauce and cheese and broil for another 1-2 minutes being careful not to burn the cheese.
